Our mission is to create the best tasting beef possible.
Starting with high marbling Japanese breeding stock, we feed organic grasses & hay supplemented with certified apple cider vinegar, molasses, and minerals. Abundance of pure well water, clean air from over Lake Superior, and kind handling are the fundamentals of raising our healthy & peaceful herd.
To make meat with the most umami we plan to experiment with timing of bovine age at harvest, sugar content in grass, and aging room conditions & duration
